Hakan, the i3-6100 setup looks interesting. What latencies do you get with this CPU?

Not that terribly good actually, around 40 µsec. Compared to the J1900 that stays below 8 µsec. But in practise it is enough to do everything including watching youtube while milling or turning (I switch between them). The only optimization is the tx-coalesce on the ethernet interface.

I would suggest plugging a USB WiFi dongle in to the machine to get internet access.
(But make sure you get one compatible with your OS)

The USB WiFi dongle sounds like a good idea.
I also found a PICO-ITX size single board computer with J1900 chip.

Would this be any good for controlling the CNC machine?

Hard to tell just looking at it. The 12V power supply is convenient for a CNC application.
(You can run it from 12V if you have that, or from a cheap buck-converter if the main voltage is higher)
Unfortunately the only way to be sure is to boot it into a realtime kernel and test the latency. But there is no reason to expect it to perform badly.
