Assuming this is a 7I96 and not a 7I96S:
If you have enough free isolated input pins you can use
7i96_inmd.bit which adds MPG encoders to the isolated
inputs. In addition MPG encoders are available on P1
with 7i96_p1inmd.bit

I used it for inspiration:
wapl.es/cnc/2020/02/23/linuxcnc-jog-wheel-setup.html
But
1) I used break board for conector P1
zz912.webnode.cz/ochrana-p1/
2) I used HAL component encoder (virtual encoder)
It is not manual step by step. Maeby it help you.
If you have enough normal inputs, you dont have to use P1.

As far as a wiring diagram goes, have you studied the 7i96 user manual ?
The encoder inputs on terminal block TB2 are clearly listed. I'm guessing your pendant has 4 wires which would be +5v, GND, A+, B+
If that's the case you'd wire them to pin 12 (+5VP), pin 9 (GND), pin 7 (ENCA+), pin 10 (ENCB+) respectively.
