I'm considering building a CNC router. I've done a little playing around with robotics, where the attention seems to be on servo based controls (I am including any encoder feedback device in this definition). When I started reading about CNC routers, I mostly see steppers.
What are the advantages of each type of device?

All the machines I have built are steppers. The first a 4'x8' router. I started over 10 years ago when prices were much higher for all systems both steppers and servos. Steppers much lower. For cnc routers steppers biggest advantages are provably lower cost and simpler installation and you can achieve great results with steppers. The biggest disadvantage I have seen with steppers is their limited rpm range.
