The last piece of hardware I need to wire up is my emergency stop button and I want to make sure that I'm doing this correctly.
I have a Mesa 7i96 and my spindle is not controlled by the board. Ideally, if I push the e-stop both the machine stops moving and the spindle stops spinning. That being said, my plan is:
Wire the switch inline between the power and the spindle driver.
Wire the switch as an input for the 7i96.
Does that sound correct?

Sounds promising.
What is your spindle motor.
Can you show your e stop wiring diagram

One way to do this is with a two-switch e-stop button.
On one of my machines I have the e-stop interrupt the 24V feed to the main contactor, and LinuxCNC gets the 24V coil feed as an input. But if you do that I think the input ought to have a protection diode.
