Have not used it for a while but i think it is possible but to much trouble. It does not use CASPER as the Ubuntu and it's derivates like Mint, for them it is very easy to add persistence, you can even partition a part of the drive ( HDD, SSD, USB ) and name it casperrw and add a line to grub, it will use that whole partition for persistence.

I have abandoned the LiveCD approach in favour of a full install, first using AgentWD40's method but (given I have several computers to install and none of them actually drives machinery) I will next attempt your 'quick and easy installation' method.
