So I've read that I should use Debian if going to use Linuxcnc because it's the most stable with it. But it seems like it's easier to use Linux Mint 19.3.
Is there really a difference between the two if only going to run Linuxcnc on the computer.

No difference, besides Mint is more user friendly and looks better.

Same here. I've had both and prefer mint for ease of installation and use. Mind you there is also a mint debian edition (LMDE) and depending on where ubuntu ends up going that might become used more often. But really you can't go wrong with the prepared mint ISO images.
