The wifi latency is to expected based on my own experience and also what was reported by PCW back when I set my machine up a few years ago. Just pop a USB wifi dongle in. I used the Asus Nano which I had already and it just worked.
I installed Linux Mint and compiled the PREMPT_RT kernel (17.3 I think).
I never had issues with booting and when I added a touch screen, it just came up with no input from me.

@rodw Would you mind putting the contents of your /boot/grub/grub.conf here so I can see it. I'm wondering if it has NOMODESET or if its using something else to over come the issue I'm having.

I also ended up getting this mini PC GB-BXBT-1900 (MZBAYAB-00). As a starting point I looked into
this post
for BIOS settings. I also removed WiFi card from the PC. Did all the tests without network connection.

do your testing without the base thread as with Mesa ethernet hardware (which I assume you are using) you do not need a base thread.
210028 is still OK for Mesa Ethernet. Mine is around 120000
