Yes we are shipping but unfortunately international shipments are not very reliable now
we have had shipments that normally take a week, take six weeks...

I found schematic for manual plazma. I have another plazma but, I think they are similar.

To what output diod I need to connect THCAD inputs?
Does it should be E18 - E19 (page 2)?

Yes.
Do add a resistor or fuse to each wire.
Small resistors should do just fine, they do not impact the voltage readings much and they will burn easily if there is a short in the wires, so mount them at least 3cm far from everything in mid air.

And if they will burn, how system will behave? Does all will turn off with error?

3A is to much, anything from 100mA to 1A is better for safety.
they will burn only if the wires going to THCAD come it touch with the metal machine frame or some other mishap.
System will not shut down, it just will not show torch voltage in case those fuses or resistors are blown.
