A touch screen monitor will be used. PCI, because it is already purchased(what exactly boards I still do not know exactly, they are in the process of delivery).

No experience with any of the boards.
But a PCI slot is not a real requirement.
PCI-PCIe adapter works at least in my setup with Asrock J1900B-ITX (with one PCIe x1 slot) and Mesa 5i25 (see here ).
Any other similar adapter should work too if it has a common supported bridge chip.
I'd choose GA-J3455N-D3H from that list of boards and give it a try.
At least on my J1900 memory modules affect latency, two identical modules seems to perform better than single or different modules. Size may also matter, I had mainly 8G modules for testing...

the D525 and J1800 are proved but in older configuration
theefor i did ask on what hardware you expect to run
the newer GA will probably work on MESA ETH stuff as noone has latency values on them
if you plan Stappers dirct on Parport PCI you might get into trouble
