11 isolated inputs provided for general control use including limit switch and control panel inputs. Inputs operate with 5V to 36V DC and can have a positive or negative common for sourcing or sinking input applications
So you can use either NPN (positive common) or PNP (negative common) depending on which you choose.
NO or NC depends on the target. You want a power failure or cable break in the sensor to look like an end stop.
One subtlety that it is easy to miss with proximity sensors is that inductive sesors have two types. The shielded ones can be identified by the outher threaded sleeve coming all the way to the end. Those will work if buried in the metal of a machine axis. The other type, whee you can see the plastic end, will detect the hole that they are in if they are below the surface.

To answer the first question, yes, the PC motherboard that I linked will need RAM, a PSU and storage. For PSU a PicoPSU (from the same site) is about £20 and RAM is another £20.
For storage you probably need an SATA drive, I have had decent success with things like www.ebay.co.uk/itm/293724488453 though I think that these are now rather outmoded and there may be more cost effective options on a GB/$£€ measure.
