Can I use Raspberry Pi 5 for Linuxcnc + ESP32 + W5500 for generating step pulses

wow, ok, in germany/amazon (not the cheapest):

Pi5/4GB = 67,84€
PI4/2GB = 47,80€

Rather than using many ESP32s, I would try a W5500-EVB-Pico
