Hello guy,
im building cnc laser machine.. its fiber laser but im facing problem for the torch high control which is acoustic in most controller
is there any interface that can handle the laser head tracking based on acoustic

This sounds a lot like a plasma cutter THC problem, except that the feed back is from a different type of sensor.
So this sounds like a job for "external offsets"

but the problem now is the capacitive torch height controller polling rate
similar to plasma yes

If the feedback is slow then you will need a soft-tuned PID, but it still ought to work.
