Hello,
I'm in the process of building a router with Dual motors in the Y-axis. I'm planning on the MESA 7I95 for the 6-axis option ,when I later add rotary axes. That said , which flavour of LinuxCNC should I go with ?, Debian Stretch supports dual motor Gantry's, but does it support Mesa Ethernet interface boards ?

The Linux distro used does not matter.
It does need to be using the Preempt-RT real time kernel when using Mesa Ethernet cards, not the RTAI one.
That said the Linuxcnc Stretch ISO available for download has the Preempt-RT kernel and Linuxcnc v2.7, so you should be good to go, once you updtate Linuxcnc to v2.8 or Master (Master might be required for the 7i95 which is a relatively new card)
