None of those.
Its asking you what speed you want tot run the servo thread at, not what the jitter is.
Unless you have changed the default servo thread period (1000 times per second) to suit different hardware, say a Raspberry Pi which may need a slower servo period, just make it the same as the recommended shown below it.

Thanks Rod,
I'm having trouble finding practical explanation in setting up Pncconfig and the docs aren't doing it for me.
Another ? Would it be better to configure XYZA now with the intention of adding the 'A' axis later

If you don't have an A axis now, I would not add it now. Instead get your XYZ machine up and running. Once you get the hang of things, you could add the A axis in 10 minutes or so by doing a bit of cut and paste and minor edits in your ini and hal files
