Greetings,
I want to make a new 5 axis machining centre with XYZ and fork type milling head with B and C axis respectively. I intend to use ac servo motor drives that require pulse and direction command. Linear Encoder on all linear axis and rotary Encoder ob rotary axis B and C ( I'm aiming for magnetic strip encoders that generate square wave but I'll like to hear about any other better and cheaper options too).Asynchronous spindle with vfd will be used. 

My question is which mesa cards will be the best for the job, keeping the latency in mind( confused between ethernet or old school version).? And any other suggestions are welcome.

Mesa 7i95 should do just fine, but do check about the spindle VFD, although spindle can also be controlled through RS485.
But it does have 6 encoder inputs, any can be used for spindle feedback.

Yes, if you need all those inputs and outputs.
7i95 has plenty of them.
