The real hardware configs can be usually be modified into a working one for your needs without too much trouble. But most of the simulation configs generally would be too much work to be worth the effort. The problem is that for a simulation there are many things that need to be faked or subverted in some way to make the simulation work without hardware. Usually it is simplest to start by a building a config using one of the wizards that is as close to what you need as the wizard will allow, then using that config as a framework modify it to your needs.
The config I set up for my first Linuxcnc conversion started out as one of the sample parallel port configs included with Linuxcnc. I modified it to use the custom hardware driver my machine needed.
