Hi i use Debian Buster with Kernel 4.19.027-rt-amd64 with ethercat.
I want use a pc with NIC Intel I219-V and it not have good support in kernel 4.19.
On reposity i have see can install Kernel 5.10.218-rt-amd64 and it support native NIC I219-v.
The kernel 5.10.218-rt-amd64 run good on Buster ?

Kernel 5.10 was shipped with Bullseye which there was never an official Linuxcnc release for. Plus you will probably get caught with python versions.
I would bite the bullet and upgrade to Bookworm and use the ISO on the downloads page.
There is not any real reason to stick to buster if you are using Ethercat. We have made it very easy to install now. Refer the stickies in the ethercat section

i have dowload it of reposity and start it at boot selection.
LXCNC run normally.

Questions: But after start new kernel is need to recompile linuxcnc ?

compiling should not be necessary. This should do it.
sudo apt update
sudo apt upgrade

Ok i have execute
sudo apt update
sudo apt upgrade .

I have test a latency-test with kernel 5.10 and kernel 4.19 the result are the same.
Max jitter with intensive use the pc , sound, grafics, file, is 55200 ns.

This value is good for Ethercat system ?
What is max jiter acceptable for ethercat.

I use appperiod in xml at 1ms and refclock at 1
