What would the single-ended wiring accomplish? So Pulse and direction+ would always be pulled high. and basically, the motor would be the only controller from Step- and Dir-?

Single ended (PUL+ and DIR+ = 5V) wiring has higher drive
capabilities (since there is only one driver output resistance
in the circuit instead of two)
Differential wiring is more suitable for servo drives with high
frequency (up to MHz) line receiver inputs.
