It seems super easy and intuitive to do material settings, with their own integrated changes to cut height and pierce height.
I'm working on understanding and doing the probe test and measuring for floating Z. I guess I need a feeler gauge set or some way to measure real world distance during the pause, so I can then compare that to the software value for pierce height, which is currently still the default 0.12. Right? If the real world distance is off, then I adjust Float Travel, if I understand it correctly.

Thanks! I made a gauge to measure, and it seems my float travel is right at 0.2" — I think I have successfully conducted a probe test and verified my pierce height. Thanks again!
