It depends.. If your design criteria can be met with one motor why not?
But Linuxcnc makes it easy to use two motors and keep them in sync and is arguably easier to design as you don't need a cantilevered gantry or a shaft spanning the table.

Would not recommend. Will probably seem fine without load, but torque under load will be uneven.

Important note, wires must be same type and same length for parallel wiring. For serial it does not matter.

I would definitely be wiring the motors in series. It's the only way to keep the current equal.

The preferred way (assuming that you are talking about using two motors on one machine axis) is to use two drivers and two sets of step-dir pins and set up two joints in the kinematics. 

eg

loadrt trivkins coordinates=XYYZ
