When I get to the
loadrt [KINS]KINEMATICS.... I get a Bash: loadrt: command not found, the hal compile worked just fine.

Can you post your hal file. Something in the loadrt line not happy. Is the kins configured in the ini?

You need hal running to be able to do command line loadrt. If remora is installed you should be able to launch the sample config from linuxcnc.

This is why it's great to have people try to follow the docs. You are correct. There is no reference of copying the linuxcnc configuration into the config directory.
In the repo there are sample configs.
Remora/LinuxCNC/ConfigSamples/
Copy one of these into the Linuxcnc config directory and then launch it with linuxcnc.
