Max output is exactly that, the maximum the controller will output to the servo drive, it is used in cases where limiting the output to a certain value is needed.
It is also dependent on the output scale and output min and max values.
I would not touch that.
In the how to it is clearly explained what to set and tune and why and how, the rest should not be changed.
