Does the official ISO come with it or with XFCE?

If you also have XFCE, switch to it and run the config, pretty sure it will work.

The official ISO had a default option to use GNOME but I had selected XFCE also (I have never used it before so I was interested to see how I liked it).

I switched to XFCE and everything seems to work like expected. I also tried "GNOME on Xorg" and qtdragon_hd sim launched and ran well. To be honest, I don't really know what "GNOME on Xorg" does but it looks/feels like GNOME to me.

I appreciate the help. This gets me running. I am going move my "working" files over now and confirm that all is well connecting to my mill.

I am interested to know if there is something unique to my setup/installation that caused this problem since I was surprised that this didn't work with the default settings on a fresh install. If there is anything I can look into to help understand the issue, I'm happy to help.

No, not your installation, it is just the fact that LinuxCNC always uses the XFCE desktop environment as it has less overhead and requires less resources to work, hence can be used with older hardware.
Nice to know there is still the option of using other DE under Xorg, gives us a bit more time.
Wayland and Xorg are responsible for rendering everything on screen from Linux, sometimes referred to as window managers but that is wrong.
Xorg is being replaced by Wayland, hence issues, but it is being worked on quite fast so soon we will have to deal with that change also as most stuff made for Xorg does not work under Wayland, although that is also being worked on.
We will see what comes first, we changing stuff to suit Wayland or them making Wayland work with older Xorg.

Linuxcnc is an X11 (Xorg) application.
You need to run it on on an OS with X11 support 
Whilst Gnome on xorg gives you the required environment, Linuxcnc for years have used XFCE
I would recommend you reinstall linuxcnc from the ISO on the downloads page as it will set everything up to get the latest version of Debian , XFCE and linuxcnc.
