The proper parameter name is in the parameter list (from your 5i25_7i77_pins_parameters.txt)
9 u32 RW 0x3B9ACA00 hm2_5i25.0.watchdog.timeout_ns

I assume this is mode 0 . is that the only mode?

I'm not sure how to change the mode at this time. I changed the sserial part from 002XXX to 102XXX and it loaded but the pins seem to be the same.

mode 2 should add the 4 analog inputs plus field voltage
mode 3 should throw an error (well it may just cause all field I/O pins to disappear)
this is the first number in the config string
the second is for the analog out section (mode 0 only)
the third is for the expansion connector (not used unless you have an additional SSERIAL card)

Here you go... I had a bit of a time getting it up and running, didn't seem to like the setp hm2_5125.0.watchdog.timeout_ns 10000000 line.
